Hot Summer Supper Apricot-Avo-Almond Salad





Yes... Organic Okanagan Apricots delivered to the Comox Valley by the sweet folks at www.okanaganfruit.ca!!  And now I am going to be making delicious salads, dressings, and maybe other stuff, all featuring these sunny little orbs... This Hot Summer evening called for a mixture of our faves: Apricots, Avocado and Almonds.  (I can see pistachio nuts in a future salad).  I used an adaptation of the original Bragg Apple Cider Vinegarette (I can see stirring some soaked dates into it next time, just a little on the tart side!)

For the two of us I used the following:
*2 Apricots, sliced
*1 Avocado, sliced
*Small Handful Raw Almonds, soaked and chopped
*2 Romaine Hearts, chopped (other mild greens would work as well)

For the Dressing: (Put the following in a blender carafe and blend up)
*1/3 C. Bragg Apple Cider Vinegar (has the "mother" full of nutrients like potassium)
*2-3 tsp. Raw Honey (or 4-6 soaked Dates)
*1/3 tsp. Tamari (or original recipe calls for Bragg Liquid Aminos, which I didn't have)
*2 cloves Garlic, minced
*1/6 C. Hemp Oil (or Olive Oil or other oil)
*1 T. Fresh Herbs, minced (your choice-- maybe what you have in your garden?)
