
Three Tomato Salsa Recipes
Combine the following in a bowl and mix together:
*1 C. chopped red Tomatoes
*1 C. chopped Yellow Tomatoes
*1 C. fresh Tomatillos, husked and chopped fine (or Green Tomatoes if no Tomatillos are available)
*2 T. chopped, fresh Cilantro
*4 tsp. Olive Oil
*2 T. fresh Lemon Juice
*1 fresh Green Chile, seeds removed and discarded, minced
*2 Garlic cloves, minced
*2 Scallions, chopped
*Celtic Sea Salt to taste
Mix well and serve at room temperature or chilled. Delicious with dehydrated "corn chips" and a side of Guacamole.

ReplyDeleteOh wow, I seem not to have come across your comment until now BealcA's Pad (lol what a strange name-- whatever were your parents thinking?)... here we are, a year later, and our tomatoes are just as slow this year as they were last year! I think we shall have to try some different planting methods next year! Thank you for your kind comments! All the best, Cynthia
