Walnut Salad Dressing or Dip Recipe

Here is a lovely Good Friday- Earth Day 2011 walnut salad dressing/dip recipe that came by email from the Raw Moms site via Ildiko. I have made a couple of adjustments (i.e.,I don't generally use agave nectar, and so where I have substituted raw honey you might want to use agave nectar?  I also adjusted the quantity of walnuts by a 1/4 cup, and lowered the amount of oil by a 1/4 cup):

½ Tbs Balsamic vinegar
1 clove Garlic
3/4 cup Walnuts
1 tsp Dijon mustard
1 Tbs raw Honey
½ cup Orange Juice
1/4 cup Olive Oil
Salt and Pepper to taste

Combine all the ingredients except the olive oil in a blender. After all the ingredients are blended, slowly pour the olive oil into the blender while it is running on low-speed to emulsify. Serve on a greens salad, with grapes, onions and apples or as a dip for raw veggies (I use organic baby carrots, red pepper strips, celery and broccoli florets)
