I remember my Facebook pal Debbie telling someone to go out and invent an Apple-Crisp type of raw cracker. I guess it has been on the back burner of my mind for a bit, because it came up yesterday and I followed my intuition, and voila! Great, delicious, chewy-crispy sweet flavourful cracker/bread/cookies!
Here is my recipe (as I remember it-- you can do some of your own experimenting by adding and subtracting ingredients as you like):
4 C. of Soaked organic Flaxseed (2 C. flaxseed in 4 C. Water overnight)
3 Braeburn Apples, Chopped into very small chunks-flakes
1/4 C. organic Walnut Pieces
1/2 C. organic Thompson Raisins
Splash of organic Apple Cider Vinegar
2 T. organic Stevia Powder
2 T. organic ground Cinnamon
Pinch of Celtic Sea Salt
Thoroughly mix all ingredients together until homogeneous (or close). This is a THICK batter and next time I will use the food processor and probably make a 'proper' raw flax bread batter in there before adding in other ingredients.
Dehydrate on 2 trays for thick crackers, or add more water or apple cider vinegar for a thinner batter and spread over teflex sheets on three or more trays. Dry overnight plus a few more hours, flip, dry until done. I scored them after flipping them.
They are very tasty!
